It was all
a dream.
Hi. I’m Ellen, your neighborhood baker!
Growing up in Sweden, you couldn’t get me out of the kitchen. I would sit and watch my mom cook until I was old enough to start helping, and I quickly fell in love with baking. I loved seeing people enjoy what I made, it sparked something in me that never went away. At 16, I enrolled in a culinary high school to study the art of baking and pastry.
For the next three years, I trained and apprenticed at some of Sweden’s top bakeries. After graduating, I was accepted into Sweden’s premier pastry school. With my advanced bakery and pastry degree in hand, I began working at one of the country’s best bakeries, where I eventually became head of pastry. But after a couple of years, the world was calling—so I set off to travel.
Along the way, I met my now-husband. We lived in Sweden for a while, where I worked as a head baker and pastry chef at another top bakery in Stockholm. Then we set off again, this time traveling the world together. I picked up some graphic design skills so I could work remotely, and when the pandemic hit, we found ourselves in Asia. After the world opened up again, we got married and decided to build a life together in the United States.
That’s when I saw the need... Good bread, the kind I grew up making and eating, was hard to find. So, I started FLOUR, a cottage bakery dedicated to sharing the art of authentic European sourdough and pastries with my neighbors.
Come along for the journey, and help me spread the joy of real bread across the Phoenix Valley. (And maybe even across the states!)
